Chicken Cacciatore is a hearty Italian stew, but because it’s tomato based, and in this recipe uses skin off chicken breast, rather than skin on thighs it makes it that bit lighter on calories. It is usually made with wine, so by leaving this out, we have saved these additional calories too. If you serve it with 3 baby potatoes per person this adds just another 100 calories, making this a really great tasting low calorie meal.

Description
A hearty Italian chicken dish
Ingredients
1 onion, sliced
2 garlic cloves, sliced
1 tsp olive oil
400g can chopped tomato
2 tbsp chopped rosemary leaves
4 small chicken breasts
small handful fresh basil leaves
favourite seasonal vegetables and baby potatoes, to serve (optional)
Instructions
Fry the onion and garlic in the oil until softened.
Add the tomatoes, rosemary and seasoning, and cook for 10-15 mins until thickened.
Heat oven to 180C/160C fan/gas 4.
Put the chicken on a baking tray, top with the sauce and bake for 15-20 mins until cooked through.
Serve scattered with fresh basil, with your favourite veg and Baby potatoes, if you like.
