Chicken Cacciatore

Chicken Cacciatore is a hearty Italian stew, but because it’s tomato based, and in this recipe uses skin off chicken breast, rather than skin on thighs it makes it that bit lighter on calories. It is usually made with wine, so by leaving this out, we have saved these additional calories too. If you serve it with 3 baby potatoes per person this adds just another 100 calories, making this a really great tasting low calorie meal.

This meal will taste great at any time of the year, and in 45 minutes you have a delicious, warming, hearty meal.
