Vegetable Chilli Salad

This recipe tastes great alone, or would make a great healthy accompaniment to some tortilla chips on movie night, or even be delicious with some grilled steak or chicken for a main meal.

Description

Spicy fibre rich salad


Ingredients

400g can black beans, rinsed, drained
200g can sweetcorn, rinsed, drained
1 red bell pepper, sliced
Bunch coriander, chopped
150g hot salsa


Instructions

  1. Rinse the black beans and corn under cold running water, rinse thoroughly and drain well.
  2. Slice the pepper into small strips.
  3. Chop the coriander coarsely.
  4. Mix the beans, corn, pepper and coriander with the salsa in a medium bowl.

Notes

Serve with a tortilla wrap or tortilla chips (20 chips is approximately 150 calories) for movie night
