This recipe is from our member Francesca who tells us it is an all time favourite of hers, and great for if you need a healthy meal for one. She says whilst it does take little while to make, it is well worth the effort. Packed with veg, it’s full of fibre, and cheese and egg give us plenty of protein, so this recipe will definitely keep you feeling full.

Description
A vegetarian recipe, not quite a quiche. Could use low fat cheddar but Edam works best
Ingredients

40g Edam (grated)
1 medium egg
2tsp skimmed milk
100g any potatoes (I like new)
100g carrot
100g onion peeled
150g broccoli
Black pepper and sea salt to taste
Instructions
- Cut onion into rings 1cm thick.
- Peel and cut other veg into bite size chunks.
- Steam veg until just cooked.
- Put 30g of grated cheese into the base of baking dish (I use a 500ml casserole)
- Mix egg and milk with seasoning (like scrambled eggs)
- Put cooked veg on top of cheese and pour egg mix over and sprinkle remainder of cheese over
- Bake at gas mark 6 or electric 200c for 25-30 mins
