Firecracker Prawns

These amazing firecracker prawns are another fabulous recipe from our member Dianne!! She has embraced her new Be Strong lifestyle and is loving exploring new recipes that meet her calorie requirements, but also the rest of her family will enjoy!

Dianne recommends serving these prawns with a nest of egg noodles, however they could be served with rice, pitta or a wrap, to zing up lunch or dinner!

Firecracker Prawns

Description

Spicy versatile prawn dish!


Ingredients

Low calorie cooking spray

2 red peppers, deseeded and sliced

4 spring onions, finely chopped

12 chillies (to your taste) deseeded and sliced

100g baby corn, cut into 3

100g mangetout, cut in half

400g king prawns

2 garlic cloves peeled and chopped

4 tbsp oyster sauce

4 tbsp soy sauce

2 tsp tomato puree

juice of 1/2 lime

1/2 tsp granulated sweetener

1 nest of egg noodles (per person) cooked as per packet instructions (additional calories)


Instructions

  1. Spray a wok with low calorie cooking spray and stir fry the peppers, spring onions, chillies, baby corn and mangetouts over a medium-high heat for 2-3 minutes. Add the prawns and continue to cook for a couple of minutes (if using raw prawns ensure the prawns are pink and opaque).
  2. Add the garlic, oyster sauce, soy sauce, tomato puree, lime juice and sweetener. Stir well and cook for a another minute until you have a thick sauce coating the prawns.
  3. Serve with the egg noodles or your choice of accompaniment, but add the calories.
