This pulled pork recipe couldn’t be simpler. All the ingredients go in the slow cooker, and you let the spices and flavours work their magic for 8 hours!!
This would make a great midweek meal. Prep it all the night before, then switch the slow cooker on before work, then come home to the delicious aromas of the cumin, cinnamon and paprika. All you need to do to then, is shred the meat with two forks mix in all the sauce and serve, with coleslaw, salad and bread rolls. Delicious!!

Juicy, tender and flavoursome pulled pork
Ingredients
2 onions, halved and sliced
1tbsp smoked paprika
2 tsp ground cumin
1 tsp ground cinnamon
2 tsp garlic salt
2 tsp sea salt flakes
2 tbsp Dijon mustard
3 tbsp red wine vinegar
2 tbsp tomato purée
2 tbsp soft light brown sugar
1.5kg boneless pork shoulder, skin and excess fat removed
To serve
soft bread rolls (approx 125 calories each)
coleslaw (reduced fat is obviously a lower calorie option)
sliced red onions
sliced gherkins
Instructions
- Heat the slow cooker to high.
- Put the onions in the bottom of the slow cooker.
- Mix together the spices, salts, mustard, vinegar, tomato purée and sugar.
- Rub all over the pork then sit on top of the onions.
- Cook for 8 hours. Remove the pork and shred into chunks.
- Mix in 4-5 tbsp of cooking liquid from the slow cooker.
- Serve in bread rolls with coleslaw, sliced red onions and gherkins, if you like.
