Fruit and Nut Breakfast Bowl

Switch up your usual porridge with this tasty fruit and nut breakfast bowl. Whilst it is a little heavier on calories, it is packed with fibre, vitamins and minerals, protein and carbohydrate.  The thick greek yogurt  gives a creamy touch, making this breakfast seem extra decadent, and the luxury fruit and nut mix, is packed with tangy sweetness, all cut through by the zesty orange… what’s not to like?

Because you cook the oats with water first, the old fashioned way in a pan, this would make a great lazy morning brunch bowl.

Description

Tangy twist on a breakfast staple


Ingredients

Scale

30g porridge oats

1 orange

100g 0%fat Greek yogurt

25g luxury mixed fruit and nuts


Instructions

  1. Put the oats in a small, non-stick pan with 400ml water and cook over the heat, stirring occasionally for about 4 mins until thickened.
  2. Meanwhile, cut the peel and pith from the oranges then slice them in half, cutting down either side, as closely as you can, to where the stalk would be as this will remove quite a tough section of the membrane.
  3. Now just chop the oranges.
  4. Pour the porridge into bowls, spoon on the yogurt, mix into the porridge, then pile on the oranges and the fruit and nut mixture.
