Broccoli Salad

Broccoli is one of my favourite vegetables, I love it raw as well as cooked. My kids love it too, which is great because it means that I have got at least one vegetable that I can serve without complaining!

Broccoli is in fact, a bit of a superfood. It is absolutely packed with nutrients, such as vitamins A, C, E and K, all great for our skin and eyes; B vitamins including Folic Acid, which is great for our brains; and minerals such as potassium, calcium, selenium and magnesium – helping our bones, muscles and cells to repair and heal.

This tasty broccoli salad is perfect for summer lunches, and feels really luxurious and decadent! Just make sure you get the portions right, or you could end up eating more calories than you set out to.

Description

Delicious salad perfect for accompanying grilled meats, or on its own for a bit of lunchtime decadence


Ingredients

Scale

Small (60g) Red Onions, Raw

25g Tesco Flaked Almonds

130ml Hellmann’s Light Squeezy Mayonnaise

30ml Tesco White Wine Vinegar

380g Baby Potatoes

8 Unsmoked Turkey Rashers

32g Canderel Sugarly Zero Calories Crunchy Sweetener

30g Mature Cheddar

180g Broccoli, Fresh

35g Raisins


Instructions

  1. Take the heads off the broccoli stem and place in cold water. On the hob bring to the boil and simmer for 2 minutes until just soft.
  2. Cut the potatoes into small pieces and on the hob bring to the boil then simmer till soft. Using a colander to rinse the potatoes and broccoli in cold water till cool.
  3. Grill the turkey rashers once cooked cut into small cubes.
  4. In a bowl mix together the mayo, white wine vinegar and cheese to make a dressing.
  5. Mix all ingredients together in a large bowl then mix in the dressing. Salt and pepper to taste. Enjoy!
