Slow Cooker Chicken Fajitas

It’s probably everyone’s favourite Mexican food, and now it’s even easier.Β  Simply throw all the ingredients in the slow cooker and set it going while you get about your day. Then all you have to do when you get home is warm the tortillas and serve! Super easy family fave!

Slow Cooker Chicken Fajitas

Description

Mexican made easy!


Ingredients

Scale

900g chicken breasts

4 bell peppers, sliced

1 red onion, sliced

2 tbsp. honey

1 tbsp. olive oil

1 lime, juice

1 tbsp. chili powder

1 tbsp. cumin

1 tbsp. paprika

1 tsp. salt

1 tsp. onion powder

1 tsp. garlic powder

200g chopped tomatoes


Instructions

  1. Place half of the sliced peppers and onion in the slow cooker.
  2. Layer the chicken and coat with honey, olive oil, lime juice, all the seasonings and chopped tomatoes.
  3. Lastly, add the remaining peppers and onions and cook for 4 hours on high.
  4. Remove the chicken and shred it with a fork, then return it in in the slow-cooker. Mix well and cook for another 10 minutes on low.
  5. Assemble fajitas and enjoy.

Notes

Serve with Tortilla wraps (approx 185 calories each) and a spoonful of 0%fat natural yogurt (approx 15 calories)
