A tasty high protein dish that will be delicious any time of year and any day of the week!
I just love chicken and chorizo together, they are definitely on my top 10 of favourite flavours and this recipe will be absolutely delicious. Combining spicy chorizo, chicken with pulses makes this a really tasty filling dish. Packed with flavour and goodness, this is something you will go back to again and again.

Description
A Tasty filling dish
Ingredients
1 tbsp olive oil
2 onions peeled and chopped
2 sticks celery, chopped
50g chorizo, chopped
2 tbsp tomato purée
8 garlic cloves peeled whole
Juice 1/2 lemon
3 carrots, peeled and sliced
1 400g tin chopped tomatoes
Salt and pepper
4 chicken thighs, skin removed
1 400g tin cannellini or haricot beans
Handful of fresh parsley or spinach
Instructions
- Preheat oven to 180c/160c fan/350f/gas 4.
- Heat oil in a large lidded casserole and cook onions and celery over a low heat for 2/3 minutes.
- When softened add chorizo and fry for a further minute.
- Add tomato purée, garlic cloves, stir and cook for a further 5 minutes.
- Add lemon juice and a splash of water and simmer for 3 minutes.
- Add carrots, tomatoes and season. Add chicken pieces and beans, stir to coat well, cover and put in the oven for 1-1 1/2 hours until the chicken is cooked and tender.
- Scatter with parsley or add spinach leaves and serve
Notes
Besides adding spinach I’ve also made this recipe adding a can of chickpeas as well – just add the calories.

Had this tonight for tea and was really taste will be having this again Graham had this with mash
