Rachel’s favourite omelette

Tuesday night is Omelette Tuesday for me, I get in late from group, and usually starving hungry, and an omelette is quick, simple and easy and fills me up. I usually throw in whatever I have got in the fridge, but this is my favourite combination of fillings. Its packed with protein and fibre, meaning I am full up, and doesn’t create much washing up either.

Description

My favourite quick meal


Ingredients

Scale

3 medium eggs, whisked

2 slices of parma ham

3 slices of chorizo

half a red pepper

half an onion

3 or 4 cherry tomatoes, halved

5 mushrooms

spinach leaves

black pepper


Instructions

  1. Chop the onion, peppers and mushrooms, and fry them off in a little spray oil, until they soften
  2. Tear up the Parma ham and Chorizo slices roughly, then add them to the pan along with the cherry tomatoes
  3. Whisk up your eggs and add them to the pan, making sure all your ingredients are bound together.
  4. Once the bottom of the omelette is set, use a turner to loosen the bottom, add your spinach leaves, then place it under the grill to set the top.
  5. Serve on its own or with some green leaves
