Description

Spicy tomatoes, pepperoni and eggs – delicious for breakfast, brunch or lunch any day of the week!


Ingredients

Scale

1 egg

200g tinned tomatoes

2 cloves garlic, peeled and chopped

Salt and pepper

30g pepperoni chopped or sliced

50g lean ham

Half a bell pepper


Instructions

  1. Heat tomatoes gently in a pan with garlic for an hour adding water when tomatoes thicken
  2. In an oven proof dish place chopped ham, peppers and pepperoni
  3. Once sauce is ready add to the dishes and place in the oven at 180 for 20 minutes until the pepperoni, ham and peppers are softened
  4. Break an egg on top and place back in the oven until the egg is cooked
  5. Season and serve

Notes

You could prep this sauce in bulk and refrigerate or freeze for use later, to save time.

To reduce the calorie further use thinner slices of Serrano or Parma ham, which would reduce the weight of the meat and therefore the calories
