Quick simple & healthy on the go snack
- Mash a small banana and add 30g oats, mix well and add 1tsp of seeds such as sunflower or pumpkin seeds
- Split the mixture into four and form into cookie shape on greaseproof parchment paper, then add a few cacao nibs on top
- Bake at around 190c for 20 mins & turn half way through to make them brown on each side
To make protein cookies just add 1 scoop of protein powder to the mix and just add the extra calories – my favourite is chocolate and it makes an ideal pre workout snack for on the go!
You can double your batch and store for in the fridge for 1 week or you can even freeze them!
