Broccoli and Pea Soup

Broccoli and peas are absolutely packed full of nutrients, high in vitamin C, folic acid, vitamin K and potassium, a genuine superfood! There are links with broccoli consumption and protection against congitive deterioration in older people too. So this super soup, is not only tasty and low in calories but also really good for you.

If you have some calories to spare, you could add a little bit of cheese, such as stilton, for that extra touch of luxury, but don’t forget to add your calories. 30g of stilton is 120 calories, so use it sparingly.

Description

A quick and easy slow cooker soup, that can be left to its own devices, till you are ready to eat it.


Ingredients

Scale

1 litre of water

500g potato, peeled and chopped

300 g broccoli

200g garden peas

1 large onion

1 vegetable stock cube


Instructions

Add all the ingredients to the slow cooker and set it on high for a couple of hours.

When all the veg is cooked through, blitz with a hand blender and serve.
