Courgetti, or Courgette Spaghetti is a brilliant way to reduce your calories, and up your five a day without it impacting on the rest of the family. While they are all having regular spaghetti or pasta, you can swap your portion out for courgetti.
You can get it ready to steam or stir fry, in some supermarkets, but its also very easy to make yourself.
If you can’t get hold of it ready prepared, you can make it yourself, you need about 1 and half courgettes per person. You can batch make it, but it will only last a day or so in the fridge and doesn’t freeze in a domestic freezer that well, so its probably best to make it as you need it.
If you are lucky enough to have the room to store a spiralizer in your kitchen, you can make it very quickly. But if you don’t, then you can make it by using a regular vegetable peeler, to peel long vertical strips off the courgette. You get slightly wider strips of ‘spaghetti’ more like ‘tagliatelle’ but it still serves the same purpose as a low calorie replacement for pasta or noodles.
You can also use carrot and butternut squash to achieve the same thing, or mix it up and use all three!
