This recipe comes from one of our members, Carrie. A hearty bowl of vegetable soup warms the cockles and is really easy to make. As with other soups, it can be batch cooked, so you can freeze portions for work lunches, or quick evening meals. This recipe has a bit of a kick to it, and depending on how spicy you like it, you can add more or less chilli according to your taste.
Veggies are great sources of fibre and contain lots of vitamins and minerals. Don’t feel the need to stick strictly to the ingredients listed here, use it as a starting point and use what ever you have got left in your fridge!

Spicy vegetable soup
Ingredients
Curly kale
1 parsnip
1 carrot
1 onion
1 tin chickpeas
5 tomatoes
1 pepper
1200 veg stock
Cumin
Paprika
Chilli
Tomato puree
Instructions
Add all ingredients together in a pan, with the spice mix, bring to the boil, until all the ingredients are cooked through and blitz with the blender!
