- Around 230 cals for 3 large wraps
- Take 1 medium Chicken Breast, rub in Cajun spice and griddle on a high heat for 3 minutes each side
- Then set aside to rest whilst you griddle red peppers
- Steam 3 large Cabbage Collard leaves just for a minute just to soften
- Pat dry your collards
- Cut the hard stem from the middle then load with your chicken, peppers, cucumber & grated carrot
- Fold in and roll and enjoy
