Description

Tasty super low calorie curry!


Ingredients

500g Monkfish skinned and boned, chopped into bite size chunks
2 x 400g cans chopped tomatoes
400ml light coconut milk
1 onion, finely sliced
4 cloves garlic, finely chopped
2 bird eye chillies, finely chopped
2 tbsp tikka curry powder
1 tbsp Garam masala
2 tsp turmeric
Juice and zest of 2 limes
2 tbsp tamarind paste
1 tbsp coconut oil
5cm fresh ginger, peeled and grated

Serve with Rice -but add your calories!


Instructions

  1. Add juice and zest of limes with 1 tsp of turmeric to the fish in a bowl and place in fridge for 1 hour
  2. Heat coconut oil in large pan
  3. Fry off the onions until soft
  4. Add chillies, ginger, and spices and fry for 2 minutes
  5. Add tomatoes, coconut milk, and tamarind paste and simmer for 10 minutes until sauce starts to reduce
  6. Place fish in sauce and cook for approx 5 minutes or until fish is opaque and cooked through

Notes

Serve with rice or naan, but add your calories.
