Description

A treat without the cheat!


Ingredients

Scale

650g potatoes
Low cal spray oil
1/2 red pepper
1/2 green pepper
1tbsp veg oil
150g 5% fat lean beef mince
40g low fat grated cheese
Sliced spring onion
Sweety drop peppers
Sriracha sauce

For spice mix:
1/2 tsp chinese 5 spice
1/2 tsp sweetner
1 tsp sea salt
1 tsp ground black pepper
1/2 tsp chilli flakes
1/2 tsp white pepper


Instructions

  • Slice potatoes into wedges & boil for 5 mins. Preheat oven to 200C & line baking try with baking paper.
  • Drain wedges & pat dry, tip onto tray & spray with low cal spray.
  • Combine spice mix ingredients together & sprinkle 1/3 over wedges.
  • Cook in oven for 25-30 mins until golden brown.
  • While wedges are cooking slice peppers, heat veg oil in a frying pan then add peppers, mince & another 1/3 of the spice mix.
  • When wedges are cooked sprinkle over remaining spice mix & divide between 2 dishes.
  • Add mince mixture & grated cheese then put dishes back in oven for 5 mins until cheese has melted.
  • Add spring onions, sweety drop peppers & sriracha sauce if using

Notes

Sarah tweaked this recipe by using 250g mince, just a splash of oil and also added white onions to the mixture & split into 3 smaller portions for lower calories.
