Tikka Turkey Burgers

Description

Tasty turkey tikka treat


Ingredients

Scale

4 spring onions (white and green parts separated)
2 garlic cloves finely chopped
2 small carrots, peeled and coarsely grated
2 tablespoons finely chopped fresh coriander leaves
500g lean turkey mince (5% fat or less)
1 tablespoon of tikka curry powder
1 large egg yolk
Low calorie cooking spray
150g fat-free natural Greek style yogurt
1 tablespoon of fresh finely chopped coriander OR mint leaves
Half a cucumber finely diced
Tomato slices
Mixed salad leaves


Instructions

  1. Put the spring onion whites in a bowl with the garlic, carrots, coriander, turkey mince, curry powder and egg yolk. Season, then mix well or blitz in a food processor.
  2. Divide the mixture into 4 even portions and shape each into a burger.
  3. Place a non-stick griddle or frying pan over a medium heat. Spray the burgers with cooking spray and cook for 5-6 minutes on each side or until cooked through.
  4. To make the Raita, mix the yogurt, cucumber and coriander/mint together and add the spring onion greens and season (I add some garlic sometimes)
  5. Serve the burger on a 60g wholemeal roll (toasted if you prefer), add tomato slices and mixed salad leaves, top with a dollop of Raita.
