Creamy Tomato Courgetti

This is a really quick and simple mid week meal, using a ready made tomato and mascarpone sauce, and calorie efficient but tasty parma ham. By using Courgetti instead of spaghetti, you drastically reduce the calories in this creamy Italian dish, but the creamy texture of the tomato and mascarpone sauce will still give you the feeling of having a really hearty meal.

Creamy Tomato Courgetti

Description

Delicious, creamy Italian staple, using courgetti to reduce the calories.


Ingredients

Scale

4 slices of Parma ham

Β½ small pack basil

350g tub of tomato and mascarpone sauce

250g pack courgetti


Instructions

Roughly tear the ham and basil.
Heat a frying pan over a medium heat and dry-fry the ham until crisp.
Transfer to a plate with a slotted spoon.
Add the sauce to the pan and cook for 1-2 mins, then toss in the courgetti.
Cook for 1 min more until warmed through.
Divide between bowls, then top with the ham and basil.

Notes

If you are sharing your meal, with someone who can eat more calories than you, they can have the standard spaghetti, so you will just need to cook that up first .
