Cajun Beef and Rice

A spicy dish that will definitely warm the cockles as the nights draw in! A really straightforward recipe that takes hardly any time at all, so perfect for a midweek meal.

It will also keep covered in the fridge for 2-3 days, so could be enjoyed thoroughly reheated as an emergency leftover lunch or dinner the following day.

Description

Quick and simple Cajun flavoured meal


Ingredients

1 tbsp. coconut oil

3 large carrots, sliced

2 peppers, sliced

4 spring onions, sliced

500g 5% fat beef mince

2 tsp. Cajun seasoning

1 tbsp. tomato purée

250g uncooked rice


Instructions

  1. Cook the rice according to the packet instructions.
  2. Heat the oil in a large pan over medium heat. Add the carrots, peppers and white parts of the spring onions. Sauté for 10 minutes until the vegetables start to soften.
  3. Add in the minced beef and season with salt and pepper. Cook for 10 minutes, until the meat is browned.
  4. Add the Cajun seasoning and tomato purée then stir well.
  5. Once the rice is cooked add to the pan along with 4 tbsp. of water.
  6. Stir well to combine all of the ingredients and continue cooking for about 3-4 minutes.
  7. Sprinkle with the green parts of the spring onions and serve.
