Cajun Beef and Rice

A spicy dish that will definitely warm the cockles as the nights draw in! A really straightforward recipe that takes hardly any time at all, so perfect for a midweek meal.

It will also keep covered in the fridge for 2-3 days, so could be enjoyed thoroughly reheated as an emergency leftover lunch or dinner the following day.

Quick and simple Cajun flavoured meal



1 tbsp. coconut oil

3 large carrots, sliced

2 peppers, sliced

4 spring onions, sliced

500g 5% fat beef mince

2 tsp. Cajun seasoning

1 tbsp. tomato purée

250g uncooked rice


  1. Cook the rice according to the packet instructions.
  2. Heat the oil in a large pan over medium heat. Add the carrots, peppers and white parts of the spring onions. Sauté for 10 minutes until the vegetables start to soften.
  3. Add in the minced beef and season with salt and pepper. Cook for 10 minutes, until the meat is browned.
  4. Add the Cajun seasoning and tomato purée then stir well.
  5. Once the rice is cooked add to the pan along with 4 tbsp. of water.
  6. Stir well to combine all of the ingredients and continue cooking for about 3-4 minutes.
  7. Sprinkle with the green parts of the spring onions and serve.

This is a definite one for batching up for lunch the next day when its even better having sat and absorbed all the flavour , just remember to start your rice off boiling first or otherwise you get to the adding rice bit and realise you should have 😀, the recipe tells you too but its easy to get distracted
