Quinoa is one of the most under-rated grains around, in my opinion. It is actually one of the only plant based sources of protein that has all the essential amino acids required by the body to function.
It doesn’t really have lots of flavour so is well paired with other ingredients to absorb their flavours whilst giving you a protein and carbohydrate boost.
This salad is packed full of flavour and some of my favourite ingredients – feta and beetroot.Β You could eat this alone for a quick lunch or as a side dish with grilled meats or fish.

Protein and carb packed salad!
Ingredients

370g cooked quinoa
200g feta cheese, cubed
2 medium cooked beetroots, cubed
165g chickpeas, drained
1 lemon, zest and juice
2 tbsp. olive oil
Salt and pepper
Instructions
- Combine the cooked quinoa, feta cheese, beetroot and chickpeas in a medium sized bowl.
- Drizzle with olive oil, lemon juice and add in the finely grated lemon zest.
- Season to taste with salt and pepper and mix well to combine.
- Divide between 4 plates and serve immediately
