Sam’s Sunday Morning Perfect Pancakes

This recipe is courtesy of Sam Cunliffe, who shared this in our Facebook group and I just had to pinch it – because it looks so delicious. A proper treat of a breakfast, and because the pancakes are made from protein powder, they will really keep you feeling full.

For a breakfast recipe it’s quite high in calories, but can easily be reduced by reducing the number of pancakes you make, and saving the batter for later.

Description

Filling and tasty treat breakfast


Ingredients

Scale

For the batter
1 scoop vegan vanilla protein

1 small egg

1 tbsp coconut flour

1 tsp chia seeds

1 tbsp ground flaxseed

For toppings (your choice)
1/2 medium banana

4 medium strawberries

9 blueberries

1 tbsp low fat creme fraiche


Instructions

  1. Mix the batter ingredients until you have a smooth batter
  2. Place a heavy based frying pan, with a little spray oil, over a medium heat
  3. Make a small round pancake with the batter in the pan, turning when the batter starts to cook on top.
  4. This mix should make 4 small pancakes.

Notes

This recipe makes 8 pancakes, and each portion is 4 pancakes and toppings, coming in at 358 calories
