Sarah’s Cabbage and Carrot Slaw

I love a bit of coleslaw with practically everything, salads, cold meats, grilled meats, the list goes on. The crunchy, creaminess is just delicious!

Coleslaw is great for increasing your fibre intake and adding to your five a day total, without it feeling like you’re eating boring bland vegetables.  And, this recipe is dead quick and simple, giving you a fresh, crunchy low calorie accompaniment to whatever you’re eating.

Sarah’s Cabbage and Carrot Slaw

Description

Crunchy, creamy coleslaw


Ingredients

Scale

74g carrot (2 small)

66g white cabbage

55g radish (2 large)

36g 0% fat Greek yogurt (1 tbsp)

1 tbsp cider vinegar

1 tsp dijon mustard


Instructions

  1. Peel the carrots then finely slice or grate.
  2. Shred the cabbage & slice the radish.
  3. Add vinegar, yogurt & mustard to a bowl & mix.
  4. Add vegetables then give everything a good mix.
