Description
Warm and filling, perfect for a winter’s day
Ingredients
1 onion, chopped
1 large sweet potato, peeled and cut into chunks
1 tbsp olive oil
1 garlic clove, crushed
2 tsp ginger puree
2 tsp cumin powder
1 litre of water
2 vegetable stock cubes
sprinkle of chilli flakes to serve
Instructions
- Sweat the onion and sweet potato for 10 mins in olive oil and the crushed garlic clove.
- Add the ginger puree and cumin powder, stir it around, then add the water and vegetable stock cubes.
- Let it cook for 20 mins until sweet potatoes are soft, then whizz it up with a stick blender.
- Served it with a sprinkle of chilli flakes on top.
