Sweet potato soup

This delicious and filling soup comes in at 150 calories a bowl, so there is even some room for a crusty bread roll or perhaps some croutons.

Sweet potatoes are a good source of vitamin C, perfect for keeping colds at bay through the winter months. They are also high in Vitamin A and B6 which helps to keep our eyes healthy and are nervous system functioning well. They are often thought of as a healthier option because of all the extra vitamins and fibre compared to white potatoes, however they have the similar calorie and carbohydrate content.

Description

Warm and filling, perfect for a winter’s day


Ingredients

Scale

1 onion, chopped

1 large sweet potato, peeled and cut into chunks

1 tbsp olive oil

1 garlic clove, crushed

2 tsp ginger puree

2 tsp cumin powder

1 litre of water

2 vegetable stock cubes

sprinkle of chilli flakes to serve


Instructions

  1. Sweat the onion and sweet potato for 10 mins in olive oil and the crushed garlic clove.
  2. Add the ginger puree and cumin powder, stir it around, then add the water and vegetable stock cubes.
  3. Let it cook for 20 mins until sweet potatoes are soft, then whizz it up with a stick blender.
  4. Served it with a sprinkle of chilli flakes on top.

Making this as a go tonight and made a few portions out of it so can freeze it as well can’t wait to taste it smells really good.
