Oatcakes topped with Skyr and Smoked Salmon

Skyr is strained yogurt from Iceland (the country not the supermarket) it’s thick, creamy and most importantly high in protein and low in fat – perfect for those trying to shed a few pounds.  This recipe is a really quick and simple idea for lunch, or a light evening meal. They would also make a great addition to a buffet or picky tea, with each topped oat cake coming in at 81 calories each.

Description

Light, crumbly and creamy lunch or light meal


Ingredients

Scale

120g Skyr Natural yogurt

Β½ tsp lemon juice, plus a squeeze to serve

85g smoked salmon, 50g finely chopped

1 heaped tsp Chives, chopped, plus extra to garnish

6 rough oatcakes


Instructions

  1. Beat the skyr and lemon juice together in a bowl, add the chopped smoked salmon, chives and some black pepper and mix together.
  2. Spread over the oatcakes, then divide the remaining salmon over the top.
  3. Add a little more black pepper and a squeeze of lemon and sprinkle with more chives.
  4. Serve and savour the amazing flavour and creamy texture

These work out at 81 calories per topped oat cake. This recipe recommends 3 oatcakes each.
