This recipe is a really quick and simple idea for lunch, or a light evening meal. 120g Skyr Natural yogurt
Β½ tsp lemon juice, plus a squeeze to serve
85g smoked salmon, 50g finely chopped
1 heaped tsp Chives, chopped, plus extra to garnish
6 rough oatcakes
Instructions
- Beat the skyr and lemon juice together in a bowl, add the chopped smoked salmon, chives and some black pepper and mix together.
- Spread over the oatcakes, then divide the remaining salmon over the top.
- Add a little more black pepper and a squeeze of lemon and sprinkle with more chives.
- Serve and savour the amazing flavour and creamy texture
