This simple straightforward chicken dish is a great fresh spring recipe. Using simple fresh flavours, it takes no time at all to prepare, and then it goes straight in the oven. It’s a dish that you could prepare in advance and leave in the fridge until you get in, and then just bang it in the oven, or even set the oven to come on and cook, so that you walk in to that lovely delicious lemony chicken aroma filling the house.
You could use chicken breast, legs or thighs for this. It would also work with pork steaks, or lamb chops. Just adjust the calories accordingly.

Description
Deliciously simple one pot meal
Ingredients
4 boneless and skinless chicken breasts
500g potatoes, unpeeled and cut into wedges
grated rind and juice of 2 lemons
1 tbsp olive oil
200ml chicken stock
4 cloves garlic, peeled
2 tbsp fresh parsley, chopped
freshly ground black pepper
Instructions
- Preheat the oven to 200ºC/gas 6.
- Place the chicken in an ovenproof dish and arrange the potatoes around it.
- Mix together all the remaining ingredients, except the parsley, and pour over the chicken.
- Cover with foil and bake for 35 minutes
- Remove the foil, add a few slices of lemon for decoration, and cook for a further 15-20 minutes.
- Sprinkle over the parsley, season to taste and serve.
Notes
This recipe would work well with any cuts of chicken, lamb chops or pork steaks. Just adjust your calories accordingly
You could swap your potatoes for sweet potatoes for a tasty alternative
Serve with your favourite vegetables, such as asparagus, tender stem broccoli, wilted spinach, rocket leaves or baby carrots. Roasted peppers and courgette would also work well.
