Prawns in a spicy coconut and spinach sauce

Super low calorie creamy, spicy prawn dish
Ingredients
250g of raw king prawns
2 teaspoons coconut oil
1 half tin of light coconut milk
1 small onion chopped
1 teaspoon of each cumin seed, ground coriander, carraway seeds & chilli flakes
1 red pepper, sliced
Coriander leaves (optional)
2 handfuls of spinach
Instructions
- Crush all the spices in a pestle and mortar until they are ground to a fine texture.
- Coat the king prawns in the spices.
- Add the oil to the pan and heat gently – add the prawns and fry until cooked through then remove from the pan and set aside.
- Add a little more oil if needed, and fry the onion gently until soft.
- Return the prawns to the pan, add the light coconut milk and chopped chilli until it simmers.
- Reduce the heat to very low and stir in the spinach until wilted.
- Add the coriander leaf and serve immediately.
