Prawns in a spicy coconut and spinach sauce

This dish makes a great starter or small plate and is packed full of flavour on its own. You could also serve with rice or spaghetti as a light meal. Prawns are super low in calories, and high in protein. They are also packed with healthy fats, such as Omega 3 and 6, which are known to have many health benefits, such as improving our heart health, supporting mental health, reducing inflammation, and preventing dementia.

This recipe is packed with the fresh flavour of coconut and the warmth of cumin and chilli. It is super quick to make, and will soon become a quick week day meal favourite.

Prawns in a spicy coconut and spinach sauce

Description

Super low calorie creamy, spicy prawn dish


Ingredients

250g of raw king prawns

2 teaspoons coconut oil

1 half tin of light coconut milk

1 small onion chopped

1 teaspoon of each cumin seed, ground coriander, carraway seeds & chilli flakes

1 red pepper, sliced

Coriander leaves (optional)

2 handfuls of spinach


Instructions

  1. Crush all the spices in a pestle and mortar until they are ground to a fine texture.
  2. Coat the king prawns in the spices.
  3. Add the oil to the pan and heat gently – add the prawns and fry until cooked through then remove from the pan and set aside.
  4. Add a little more oil if needed, and fry the onion gently until soft.
  5. Return the prawns to the pan, add the light coconut milk and chopped chilli until it simmers.
  6. Reduce the heat to very low and stir in the spinach until wilted.
  7. Add the coriander leaf and serve immediately.
