Pulled Jackfruit Tacos

This delicious recipe, is fantastically tasty. Pulled Jackfruit in sweet and smokey barbecue sauce, with creamy avocado smash with just a hint of chilli, all served in crispy tacos.Β  A low calorie (and vegan) alternative to this Mexican staple!

You can have a really fantastic Mexican feast, whilst still hitting your calories, and stay on track for your Veganuary challenge.

Pulled BBQ Jackfruit Tacos with Spicy Avocado Smash

Description

Low calorie Mexican feast food!


Ingredients

Scale

For the BBQ Jackfruit
1 tbsp vegetable oil

1 red onion, finely chopped

1 tsp ground cinnamon

1 tsp cumin seeds

2 tsp smoked paprika

2 tsp chipotle tabasco

1 tbsp apple cider vinegar

4 tbsp BBQ sauce

200g can chopped tomato

2 x 400g cans young jackfruit in salted water

For the Avocado Smash
1 avocado

1 garlic clove

Chilli flakes

Iceberg lettuce

To serve
8 taco shells


Instructions

For the BBQ Jackfruit

  1. Heat the oil in a frying pan and cook the onion until very soft, for around 10-12 mins.
  2. Add the cinnamon, cumin and paprika to the onions and cook for a further 2-3 mins.
  3. Next add the tabasco, vinegar and BBQ sauce and mix well before adding in the tomato, the drained jackfruit and 200ml water.
  4. Leave to simmer gently, covered, for 30 mins stirring every 5-10 mins to help break down the jackfruit, then take the lid off and cook a further 10 minutes.
  5. Once cooked, use a fork to make sure all of the jackfruit is well shredded. Check seasoning and add another tbsp of BBQ sauce if necessary for extra stickiness.

For the Avocado Smash

  1. Destone and peel a ripe avocado
  2. Dice the avocado and place in a bowl
  3. Finely chop or pass through a garlic press
  4. Mash the avocado and garlic, adding salt and pepper to taste and a few chilli flakes for a bit of a kick.

Assemble the tacos, with a layer of iceberg lettuce, a tablespoon of jackfruit and a dollop of avocado smash… delicious!!
