Spinach and Egg Muffins

A really low calorie tasty snack. Can be made in advance and kept for three days in the fridge as a snack or to add to salads.

1. Whisk 1 large egg & 2 egg whites
2. Season with salt & pepper & add jalapeño/chilli flakes if you like a kick
3. Spray fry light into a deep muffin pan
4. Line the muffin pan with spinach leaves and add your egg mix to below the rim
5. Bake in oven for around 15 mins at 200c

Only 50 calories each!
