Meatless Mexican

A marvellous Mexican meatless feast

Take 1 can of jackfruit, rinse & shred to a pulled pork appearance.
Place in a casserole dish.

Add 3 chopped peppers, 1 handful of sweetcorn & edamame beans, and a tin of chopped tomatoes

Then add fajita seasoning, smoked chilli flakes, smoked paprika and mix well.

Cook in the oven at 200c for 25 mins.
Makes 3 portions at 125 calories each.

Serve with salad and wholemeal wraps or rice – just add your extra calories.
