Description
Lower calorie version of an Italian classic
Ingredients

250g dried pasta
4 bacon medallions cut into small pieces
2 cloves of garlic
8 closed cup mushrooms
3 eggs
40g hard cheese such as Parmesan
Ground black pepper
Fresh chives
Fresh parsley
Spray oil
Instructions
- Put 250g dried pasta in a pan of boiling water until cooked through
- Whilst the pasta is cooking, cut four bacon medallions into small pieces approximately 1 cm square. Add up to five sprays of spray oil and fry in a frying pan, with 2 cloves of garlic, chopped finely and 8 closed cup mushrooms, chopped.
- In a jug add three eggs, and grate 40g hard cheese such as parmesan or mature cheddar. Add a good dose of ground black pepper, small handful of chopped fresh chives and some fresh or dried parsley.
- Once the pasta is cooked, drain and add back to the pan on a low heat, add the bacon, mushroom and garlic mixture, then the egg and cheese mixture. Then toss the pasta through the mixture over a very low heat, until it’s all warmed through.
