Simply oven bake 2 quorn veggie ‘sausage’ patties
Slice mushrooms, and aubergine & season with spices, bake for 20 mins at 200c
Add kale to the oven at the last minute to just part bake
Serve with a drizzle of mustard & jalepenos
Try serving with a toasted whole grain muffin or beans for a more filling meal (just add your extra cals for the carbs)
Only 200 calories, so if you need to add carbs, you have plenty of scope to do so!
