Perfect Pancakes

Its Pancake Day! Don’t deny yourself the treat, serve them up with some delicious toppings like mixed berries and some fat free natural yogurt, or a chopped banana and a couple of teaspoons of honey or low calorie chocolate sauce!

This recipe makes 6 decent size pancakes, and minimises the fat so, reduces the calories in comparison to some other recipes. Each pancake is 143 calories, and with a healthy topping you can still make that fit into your calorie allowance.

Description

Delicious light pancakes – perfect any time of the year, not just pancake day!


Ingredients

Scale

4 eggs

140g plain flour

200ml milk

Spray oil


Instructions

  • Using a food processor or hand whisk, whisk all 4 eggs.
  • Add flour and whisk this in till it makes a loose paste
  • Add the milk a bit at a time, whisking all the time, to ensure you don’t get any lumps.
  • Heat a non-stick frying pan on a medium heat and add one spray of spray oil to the pan
  • Pour a little batter into the pan until it covers the base of the pan with a thin layer of batter
  • Once the batter starts to set on the top side, loosen the pancake and flip it over
  • Cook the reverse side for another minute or so, until it turns golden brown.
  • Serve with your choice of topping
