Lentil Casserole

Lentil Casserole aka Vegetarian Cottage Pie
Around 250 cals per portion
Low fat and protein packed

Simply add one tin of green lentils, 1 tin of plum tomatoes, sliced carrots, tomato purée, salt & pepper to a casserole dish
Crumble in one vegetable stock cube (or one beef flavoured cube for non veggies)
Bake at 200c for half an hour
Makes 3 portions
Serve with cauliflower mash or carrot & swede mash (add the calories)
