Spicy chunky and Fat Free Ratatouille – around 100 cals per portion
In a large roasting tin simply add the following:
Aubergine diced
Courgette diced
Peppers diced
Green beans, topped and tailed and chopped into inch long pieces
Edamame beans
Two tins of plum tomatoes
Tablespoon of tomato purée
One garlic chopped
Sprinkle of hot paprika & chilli flakes
Bake at 200 for around 30 mins
Eat as a vegetarian dish or serve with grilled or steamed fish or chicken
Makes several portions and can easily be frozen for a quick tea later
