Courgetti with Lemon, Chilli, Ricotta and Mint

This beautiful fresh , zesty and zingy courgetti salad is a perfect lunch time dish, snack or side dish to a bigger meal. At only 160 calories a serving, its really low calorie, but the use of ricotta gives this a really luxurious taste!

Don’t wait for the warmer weather to have this salad, its so delicious you can make it a staple all year round, and it would also make a great addition to a buffet table at parties.

Courgetti with Lemon, Chilli, Ricotta and Mint

Description

Delicious, zingy, courgetti salad


Ingredients

Scale

2 courgettes, ends trimmed and spiralized or shredded into thin noodles

½ red chilli, thinly sliced

zest and juice of ½ lemon

½ small pack mint, leaves picked

50g soft ricotta


Instructions

Toss the courgetti in a bowl with the chilli, lemon juice, 3⁄4 of the mint, some flaky sea salt and black pepper. Serve onto a plate and garnish with the lemon zest, reserved mint and small dollops of the ricotta.
