Susan’s Salmon and Veg Pasta

This simple pasta dish is quick and easy for a mid week tea. Salmon is an oily fish, which whilst high in fats, they are healthy fats, which are good for brain function, improving heart health and it is thought helps with inflammatory conditions such as arthritis.

You could keep this recipe simple, or spice it up with a little lemon juice and chilli, or try it with a little sprinkle of dill and lemon juice to bring out the flavour of the salmon.

Description

Salmon with pasta, peppers, tomatoes and mushroom


Ingredients

Scale

1 small Salmon fillet

60g wholemeal fusilli pasta

Chopped peppers

Halved cherry tomatoes

Chopped mushrooms

Any other veg you want!


Instructions

Wrap salmon in foil and bake in the oven at 180 degrees c for approximately 20 minutes

Cook pasta in boiling water.

Fry chopped veges in fry light.

Flake the salmon, throw in a bowl all mixed up together.
