This delicious spicy soup with a hint of sweet parsnip is lovely and thick and filling. The chickpeas are a fantastic source of vegetable protein and a good source of minerals. They make this chunky vegetable soup nice and thick, so it feels like you are getting a really substantial meal, with this bowl of soup. The spice perfectly compliments the sweetness of the parsnip and gives it a bit of a kick.
There’s nothing nicer than a lovely, hot bowl of soup when the weather turns colder, so make this one of your favourites as the dark nights come in.
