Spicy Curried Parnsip and Chickpea Soup

This delicious spicy soup with a hint of sweet parsnip is lovely and thick and filling. The chickpeas are a fantastic source of vegetable protein and a good source of minerals. They make this chunky vegetable soup nice and thick, so it feels like you are getting a really substantial meal, with this bowl of soup. The spice perfectly compliments the sweetness of the parsnip and gives it a bit of a kick.

Description

Quick & Simple spicy Curried Soup


Ingredients

Scale

2 Carrots

3 Parsnips

1 onion

1 tin of chickpeas

1 veg stock cube

3 heaped teaspoons of medium curry powder


Instructions

Simply chop all the veg into small cubes
Add a tin of washed chickpeas
Add the veg stock cube and curry powder
Pour over boiled water to just above the veg
Simmer for around 20 mins
Blend 2/3rds of the soup to thicken and leave some chunky veg

Notes

You can use extra spices if you like, why not try cumin, cayenne, turmeric or maybe a few chilli flakes
