Elle’s 5 Minute Vege Curry

This is a really quick and easy recipe with amazing flavour and uses only 3 ingredients! It makes a great evening meal, and provides a good source of vegetarian protein in the lentils. It’s really low calorie too at only 225 calories per portion. With calories this low, you could have it with a small portion of rice or a small naan, to give it that authentic Indian feel! Tailor it to your spice needs, by adding extra chilli flakes if you need it!

Description

Quick and easy vege curry dish, 3 ingredients and takes 5 minutes to whip up!!

Serves 2 people and costs around £2.50!! Quick delicious and full of goodness!


Ingredients

Scale

1 250g pack of ready made curried lentils

1 pack of Cauliflower Rice

1 bag of fresh spinach or 3 chunks of frozen spinach


Instructions

1.Add the spinach into pan with little boiling water (if frozen) and heat through to lightly cook the spinach.
2. In a frying pan, simply brown the cauliflower rice for a couple of minutes then add the spinach and stir through.
3. Heat the curried lentils in the microwave for 2 minutes then stir through into the other ingredients.

Simple as that! Serve and enjoy!
