Spicy Cream of Tomato & Sweet Potato Soup

This recipe has been provided by one of our members Julie, who is a brilliant cook! This soup tastes just like ones that a certain well known soup brand make, but with a bit of an extra kick.  A lovely sweet flavour comes through from the sweet potato, which also helps to thicken it.  Soups are a great way to get some extra veg in to your diet, you can batch cook them, and split them into portions ready for lunches, when you are short on time.

Spicy Cream of Tomato & Sweet Potato Soup

Description

Homemade spicy cream of tomatoes and sweet potato soup, with a chilli kick
The sweet potato sweetens it naturally and the yogurt acts as the cream


Ingredients

Scale

1 onion chopped

1 teaspoon minced garlic

Half chopped red chilli

250 grams peeled cubed sweet potato

500ml water

1 carton of passata with chilli and peppers

1 large tomato chopped

1 vegetable stock cube

1 tablespoon full fat greek yoghurt


Instructions

Fry chopped onion using spraylight olive oil
Add garlic and half a chopped red chilli and fry for further 2 to 3 mins making sure not to brown too much
Add cubed sweet potato and water and simmer for 10 mins
Add passata, stock cube and chopped tomato
Cover and simmer for 20 minutes
When sweet potatoes are soft, remove from heat and cool for 30mins
Blend
Add yogurt
Blend again

Notes

If the soup is to thick for your taste, add water to gain the consistency that you prefer
