Perfect Pea Soup

Try this delicious winter staple. You just can’t beat a bit of pea soup on a cold autumn or winter day, after a lovely walk. Simple, quick and easy to make, with only a few ingredients that we all have in our cupboards. Peas are a great source of vitamin C and fibre, and are also a source of protein, which will keep that metabolism burning and your tummy fuller for longer. Enjoy it hot, and maybe with a small piece of crusty bread, or you could dry out some small pieces of bread, and toast them in a dry pan, to use as croutons.

Description

Delicious homemade 2 pea soup


Ingredients

Scale

1 Onion chopped

Teaspoon crushed garlic

1 litre water

1 veg stock cube

700 grams garden peas

1 tin mushy peas

Salt and pepper


Instructions

Chop onion fry in a little water or with fry light for 5 minutes
Add garlic fry for 2 minutes
Add frozen garden peas, stock cube and water
Simmer for 10 mins
When peas cooked, add tin of mushy peas and stir
Simmer for 10mins
Add seasoning

Notes

You could add 50ml of semi skimmed milk to get that creamy taste – just remember to add it to your calories!
