Francesca’s on the door at our Darwen group, and she has sent us this fantastic creamy cauliflower and broccoli soup recipe. Cauli and Broccoli are really high in vitamin C and folic acid. Folic acid has been found to support brain function, and helps in the fight against dementia! This soup is really low calorie at only 120 calories, but full of goodness. It’s really easy and feels really luxurious as its really thick and creamy.
Francesca’s tip is to batch cook and freeze portions for a quick lunch!

Description
A creamy easy soup that freezes well for a lunch at work!
Ingredients
500g cauliflower including leaves and stalk you would normally throw away
250g broccoli
250 g onion
80g reduced fat soft cheese (I use use garlic and herb flavour)
2 vegetable or 1 x veg and 1 x chicken stock cube
water
Instructions
Chop all vegetables
Put veg in a large pan
Barely cover with water (you can always add more if needed)
Add stock cubes and have a good stir
Bring to the boil and simmer until the veg is nice and soft
Use stick blender to your blend to your desired texture
Add the reduced fat soft cheese and whizz a bit more

Yum!! Substituted reduced fat cheese for full fat garlic and herb( only used 80g)
