Description
Quick & Simple spicy Curried Soup
Ingredients
X2 Carrots
X3 Parsnips
X1 onion
X1 tin of chickpeas
X1 veg stock cube
X3 heaped teaspoons of medium curry powder
Additional Spices if required such as cumin, cayenne, turmeric
Instructions
Simply chop all the veg into small cubes
Add a tin of washed chickpeas
Add the veg stock cube and curry powder
Pour over boiled water to just above the veg
Simmer for around 20 mins
Blend 2/3rds of the soup to thicken and leave some chunky veg
